There are some really slick themes that dress up the default STV, or you can use a UI replacement (SageMC) addin. There are two reasons I wouldn't want to do what you suggested.  First, it would be a lot easier but me, I enjoy the challenge of trying to find a way to put a full on Media Center in my car!  :)  I just enjoy the fun.  Also, it could end up costing the same since I need a Zune for myself.

That is what I plan to do with the ZuneHD when it becomes available. Hopefully it will have an option for more storage than 32 GB though.
